A little bit of spice on the cob

This great grilled corn recipe was adapted from Eating Well.

  • 4 ears of corn on the cob, husked and halved
  • 2 T of mayonnaise
  • ½ T of chili powder
  • 4 T finely shredded Parmesan Cheese
  • 1 lime quartered
  • Preheat grill to medium/high

Combine mayonnaise and red pepper in small bowl. Set aside.

Grill corn until start to darken and soften in places. Turn often.

Spread with mayonnaise sauce. Sprinkle with parmesan. Serve.

Wrap in tin foil, take to picnic!
